I got together with Yajaira to make a special celebration dish to mark our 1 month anniversary in the Hab. Yajaira really wanted to make sushi so we decided to do it with a twist. Spam musubi was submitted to the HI-SEAS recipe contest by Sarah Rose.  What we loved about this recipe is it satisfied Yajaira’s desire for sushi and allowed us to connect with our current home on the slope of Mauna Loa, Hawaii. It was easy to make and perfect for our celebration.

Recipe Ingredients: (serving of 6)

  • 2 cups cooked short grained Japanese rice
  • 1 cans Spam
  • 3 sheets nori, cut in 2″ strips lengthwise
  • 1/3 cup shoyu
  • 3/4 cup sugar

As you can see from the video we had a lot of fun making this recipe. The directions are pretty simple and if you have kids there is a good chance they will enjoy this dish. Sarah wrote in her recipe:

Gunner, age 8, in Kailua, Oahu says, “I will eat Spam Musubi anytime.”


  1. Cut Spam into 6 slices per can.
  2. Combine sugar and shoyu in a pan over medium-low heat.
  3. Fry spam in sugar and shoyu until mixture has thickened and Spam is slightly crispy.
  4. Drain on absorbent towel.
  5. Cut sheets of nori into 2 inch strips.
  6. Using a Spam can,  cut out 1/2 inch rice cakes.
  7. Place a rice cake on a nori sheet.
  8. Place cooked Spam on top of rice cake.
  9. Fold nori over the rice and spam, until the nori is wrapped completely around the middle like a belt.
  10. Repeat until Spam, rice and nori are used up.

Yajaira was really happy with the final results and the crew celebrated one month in the hab.
