Hi Everyone,
I have a secret I need to let you all in on. I never ever use recipes and I never ever write down what I make. No two dishes are exactly the same. I believe in a pinch of this and a handful of that. So, making these videos and providing you with recipes is a nice challenge for me. I have no idea if the proportions I am giving you are even close to what I am doing. but, you can watch the video and get a good idea of the proportions I use. I hope this doesn’t turn you off of Si’s Kitchen.

Okay, on to this weeks dish. I literally just went into the fridge and looked at what needed to be cooked before going bad. Since I had a bunch of veggies and an artichoke ravioli the decision was easy – A toasted ravioli pasta dish.

The video below is longer. It is about 10 minutes, but, I want you to know it is a complete dish from start to finish. I am too lazy to cook long meals or to edit video. I like to shoot one continuous shot because then I can quickly upload it and post it to my web page. If you take the time to follow this recipe you will be well rewarded. It truly is delicious!

Ingredients
Artichoke Ravioli (I got mine from Trader Joe’s)
1 cup sliced peppers and onions (I got it already sliced in the produce dept.)
1 cup of snow peas
I cup of asparagus
5 cloves of chopped garlic
1 jar of bruschetta with extra garlic (by Classico)
1 jar of artichoke antipasto topping (from Fresh & Easy grocery store)
1 Jar of artichoke hearts
2 tablespoon of olive oil

Alternative ingredients

Any veggies will probably work well. I didn’t have any mushrooms but I am convinced they would have only added to this dish…even though I don’t really like them!
As for meat, you could probably get away with adding some sliced chicken of maybe some salmon but I think this dish is excellent as a vegetarian entree. Come on people…did you see those yumme veggies!!
