Vegetarian Tortilla Soup

Vegetarian Tortilla Soup
1 can black beans
1 can fire roasted diced tomatoes (can also add a can with green chilies or jalapenos)
1 package of Kashi 7 grain pilaf or equivalent
1 quart vegetarian broth**
1/2 cup diced onions
1/2 cup chopped peppers
2 Tbs fresh garlic
Optional add-ons:
pico de gallo
cilantro
jalapenos-in the video the jalapenos I added did make it really spicy so use sparingly
shredded cheese
avocado
sour cream
tortilla strips
Meat Lovers add-on:
all white chicken in a can stirred in at the beginning with the veggies!
**multiple cans of diced tomatoes can be added instead of vegetable broth.

I love that you said “You can’t have too much garlic, in my opinion.” In my house, we feel the same. We literally have a recipe called “You Can’t Have Too Much Garlic Chicken.”
Thanks for posting this beautiful and easy recipe. It’s going to be my inspiration for lunch today. I won’t make the same thing, but it occurs to me I’ve got some leftover multi-grain rice and leftover cooked white beans in the fridge waiting to be used up. I’m a little tired of them in their current incarnations. But thrown in with some sauteed veggies and turned into soup? I’m all over it!
I agree! The idea behind this quick-n-easy soup is to make it your own. In fact, every time I make this soup it is a little different based on the ingredients I have at hand!
